On Princess, I have sailed on the Sun Princess, Dawn Princess, Sea Princess, Grand Princess and the Royal Princess (2 times).
On Celebrity, I have sailed on the Horizon, Century and Mercury.
I have felt that the food on both lines is comparable and to Princess' favor, they have an 'always available' selection that you can choose from if one of the entrees does not suit you. It consists of chicken breast, steak, and salmon as well as ceasar salad. Also, Princess offers the alternative dining Bistro for which you do not need reservations. On the Grand, the Southwest and Italian restaurants need reservations. On Celebrity, you must make reservations at the alternative dining, thereby, foregoing any sponiety.
The staff on Princess are much friendlier. If choosing Celebrity, go with the Century, she is a great ship. The Mercury was a big disappointment.
Decor on Princess ships will be more traditional, Celebrity it will be of a modern flare.
