Probably not since she was laid up which usually means that all systems are shut down. Also, most sprinkler system are not capable or meant to extinguish a fire - they slow down the spreading of the fire but not more than that.
I am sure the fire systems were down because she was on shore power at best and had a small (if any) fire watch. But I am surprised the fire doors were not closed to prevent the spread of the fire.
She joins a long list of ships lost in the shipyards of Greece.
