First off let me say sorry because this is a big question or questions rather.

I just want to know what model makers make the following 1:1250 waterline models (if anyone even does) and who makes the best for a reasonable price? I recently bought a old Tri-ang model of the QE on the QM. I would like to continue collecting.

Sorry. You don't have to answer all of them.

Saga Ruby
QE2
QM2
Oceanic
Voyager/ Freedom class'
Caronia
Norway
Any Vista class ship

Cunard Fan, with the exception of the two Sagas, everything else on your wish list is available. In fact, I have all of them. You may want to try www.morningsunshinemodels.com or www.alnavco.com for them. These are probably the two best sources for shipmodels in the U.S. Also, check out ebay. There is almost always something from your list available there.

Saga Rose and Ruby are available from Mercator as SagaFjord and Vistafjord or Caronia. I haven't seen them in Saga colours.

There are many models of QE2, it partly depends on which configuration you want. Conrad/Hansa do an as built and a Falklands version (use ebay for these), Mercator have a dieselised version, as do Carat. I have the Mercator version. There may also be a Carlo-Marquadt (CM)version.

QM2 - again a lot of choice. CM version is the cheapest. There is also Carat/ Classic Ships and Scaherbak. I have the Carat version which I love, very detailed and priced to match.

Oceanic - which one? The one which is with Pullmantur now is available form CM and Mercator I think, in original white hull.

Voyager Class - CM model and Carat (superb). Now also Schaerbak, also very nice.

Freedom Class - Schaerbak and CM models.

Norway - CM and Carat both have one.

Vista Ships - There are CM versions of Arcadia, Zuiderdam, Costa Atlantica, Carnival Spirit. Queen VIc expected soon. Dragon Models made a toy Carnival Spirit/ Legend

Normandie - CM, Mercator, Carat

Canberra - Mercator (cruise and falklands),
Oriana and Aurora - Mercator

I use www.wiedling.de as my main store. Your problem in obtaining the above will be matching price, availability and quality. Ebay is good for some models, but depends of course on how exciteable bidders are.
Olivers Welt as well as being a second hand retailer also has a serchable online database.
I also use Galerie Maritim as a store when I am in Hamburg. Www.steeelnavy.com/1250 is a message board for fans of the ships in this scale. There is somewhere on the web a photo database of these ships, but afraid I can't remember the address at present.

Several members of the Olsen fleet are indeed modelled - the Olsen ferry fleet that is. But mostly in the colours of different owners. Olsen is a bit obscure for the modellers I'm afraid.

Risawoleska make some nice models of Olsen's older Black Watch & Black Prince, even Braemar & Blenheim. Do you have these Matts? I think they look lovely. They have Crown in UAE livery too, but no current Olsen vessel, shame.

Indeed those very vessels have docked in the miniharbour!. As you say it is a pity but the current Olsen ships aren't covered. The model makers seem to think passenger ships should be more well known - but to my mind there are many obscurer models available. Oh well, if and when they are made I shall doubtless invest!

Cunardfan, you need to watch ebay, as most if not all of those models have been available on ebay sometime this year. Also quite a fe wof the others are available on the web.
