Holland America Line announced this week that it will be "enahancing" the dining experience on on board their fleet with the addition of Dancing waiters! A napkin ballet! Flying pepper grinders and a plate-spinning kick-line!

According to HAL, "Dinner theater" takes on a whole new meaning on Holland America Line with the debut of the entertaining and innovative Signature Master Chef's Dinner which combines the premium line's award-winning cuisine, service and entertainment into an engaging new fine dining concept at sea.

"We are well-known for our outstanding service, excellent food and innovative entertainment," said Richard D. Meadows, vice president of marketing and sales. "Our new Signature Master Chef's Dinner builds on these strengths while creating an unforgettable dining experience."

Guests are greeted by more than 75 smiling service staff including dining room stewards, cruise activities staff as well as the ship's singers and dancers, all dressed as "chefs," wearing dazzling white hats and jackets.

A crisp, pleated chef's hat festooned with a clever collector's menu in the shape of kitchen utensils describes the evening's dining and wine selections. Stewards welcome guests to the special dinner event and invite them to join in the fun and don the honorary chef's hat, which when lifted off the plate reveals a fresh-baked dinner roll also in the shape of a chef's hat.

Musicians set the tone for the evening with custom-made "foodical" instruments such as drums shaped like cakes sitting on bread-stick stands, a banana saxophone, and a pear-shaped bass. The lights dim as the music begins.

Act 1, the "Waltz of the Napkins," involves the precise delivery of napkins by staff in a choreographed waltz. The dancers orchestrate each movement culminating in the presentation of a domed silver platter containing the "Chef's Amuse Surprise," a small treat that is a welcoming gesture from the executive chef. The "Chef's Amuse Surprise" selections are served on a rotating schedule and include delicacies such as Mushroom Mousse with Asparagus in Bouche, Smoked Salmon Mousseline with Chive and Dill, and Foie Gras Petit Four with Caramelized Anjou Pear.

Act 2, the "Show Salad Spectacular," literally brightens the air with blurs of red, green and yellow as stewards juggle colorful vegetables into an over-sized salad bowl. Singer "Pepper Romaine," costumed in a sequined, full- length green "salad" gown, accompanies the action. The atmosphere pulsates with servers cavorting around the salad bowl tossing baby greens, peppers, mushrooms, scallions and cherry tomatoes. The juggling is raised a notch as pepper grinders join the airborne entourage. Salads are then delivered direct from the galley as servers point out to guests the delectable choice of starters and entrees detailed on the menu's rolling pin and butcher knife.

The menu offerings feature an array of starters, including Alaskan Salmon Tartare with Avocado, Golden Baked Brie in Phyllo Dough, Lobster Bisque or Oxtail En Croute. The evening's highlight comes in the form of a choice of entrees that are a food-lover's delight. Whole Roasted Tenderloin of Beef; Grilled Lamb Chops with Oregano and Apple Chutney; Duck Breast a l'Orange; Sauteed Shrimps "Provencale"; Apricot Glazed Salmon with Soya Garlic and Ginger Splash; Tagliatelle with Roasted Chicken and Portobello Mushroom; or Wild Mushroom Strudel. The band provides background music during the starter and main courses.

The Signature Master Chef's Dinner "Grand Finale!," Act 3, features Master Chef Rudi Sodamin's "Hats Off" dessert -- an incredible creation that captures the dynamic, nuanced flavor of bittersweet chocolate in a luxurious mousse, surrounded by rubies of macerated berries and topped with a white chocolate chef's hat with Chef Rudi's signature in dark chocolate.

As guests receive and enjoy their signature "Hats Off" desert, the sweet sounds of The Archie's hit song "Sugar, Sugar" resonates throughout both levels of the stylish dining room. Next, the spectacle turns to the ship's real chefs who emerge from behind-the-scenes to line the dramatic balcony. The clever choreography continues as the servers dance through the audience with dinner plates spinning high in the air and then line up to form a kick-line. The rousing finish has guests singing and clapping along with the music as confetti flies through the air.

The Signature Master Chef's Dinner will be featured in the elegant two- tiered main dining room once on every Holland America Line cruise by fall of 2006. The event has debuted on the ms Volendam and will be rolled out on the ms Amsterdam in May. By early July, the dinner theater show will be on the ms Rotterdam, ms Zaandam, ms Maasdam, ms Ryndam, ms Statendam and ms Veendam. The dinner show debuts on the ms Prinsendam in late July and will be on board the Vista-class ms Noordam, ms Oosterdam, ms Westerdam and ms Zuiderdam in the fall.

I'm sure this is a fascinating and entertaining event, but it's indicative of the "dumbing down" of Holland America for the masses they're trying to get to fill their new ships. HAL traditionally had an elegant, refined dining service.

Not to knock this entertainment, but it just seems more appropriate to Disney and Carnival-brand ships than on HAL. I wonder if this will further alienate their traditional clientele.

Considering the poor dining room experience I had in January on the Oosterdam (everything else onboard was the usual HAL high standard), this comes as no surprise. And I wondered what they could possibly do to make the dining room service any worse!

I can't imagine HAL ever embracing such a concept. However, I experienced some of this kind of 'performance' for the first time on 'Explore of the Seas' last year.

I just wanted the waiters to concentrate on serving me promptly, accurately, then to shut-up, and disappear between each course. In other words I just wanted them to: CUT THE CRAP.

Just the thought of it made me lose mine!

We'll have Room Service that night (sans hi-jinks I hope) or eat in the Lido.

Wonder which idiot thought up the concept.

It sounds indescribably vulgar and as if the senior management at HAL have lost their minds. Once again, I am delighted to retreat to the world of Celebrity and Cunard - premium lines who understand the concept of style.

Mike, wait until Celebrity intoduces Manger! the new Cirque du Soleil dinner show.
I would not complain about singing and dancing waiters as long as we do not have to eat what the musicans and actors cook.

I don't understand 'the chef's dinner'! - is that by special invitation? Most ships seem to have 4 seatings these days.

We've not been on a HAL ship for 12 months now and, heaven knows, things may have changed.

I think this is a dinner show, and would not affect anny other sitting. I to don't like that others mess with my food actually i hate it. I attent 1 dinnershow restaurant in Rotterdam where between the diches the serving team performed songs frome disco to opera, even a transvistite act came across. Quite fun.

But this is not really new to HAL remember Dutch dinner where every passenger gets a Volendam costume cap. And music frome a Dutch street organ played in the background. O and the dinninf crew are dressed in Volendam costume. It cane not be worse than that. Happy that there was no Dutch dinner a/b the Zaandam last year....

Just CCL doing it's thing,so sad,though after our last cruise on HAL something needed to be done about the dinner meals,though I was thinking more along the lines of improving the food.

[b]we've participated in a Mediaeval Banquet in London, UK (in a dungeon under the Tower of London if I recall correctly)- now that was fun! - big pewter bowls of soup accompanied by chunks of bread (no spoons) then on pewter platters, hunks of meat, half a chicken, ham etc.etc - all to be eaten with the fingers, huge tankards of ale on the side which Serving Wenches kept topped up. No tablecloths but napkins the size of bath towels. You attended by choice and paid dearly for the privilege.

But this is not really new to HAL remember Dutch dinner.......

Don't believe the antics described can in any way be compared to the Dutch Dinner - Dutch Girl Hats for the ladies and black caps for the men - it was very civilized - no juggling etc.etc. A few Dutch style items on the menu - and you didn't have to choose any of them. We always enjoyed that evening.

This sounds like a bad idea that keeps coming back and back again. A few years ago Holland America experimented with `theme nights`for dining with waiters dressed up in a variety of French, Mexican , etc. costumes that was more embarassing then entertaining. They eventually dropped the idea and gave their waiters and steward more modern and classical uniforms. Why do they not concentrate on providing a relaxing and enjoyable dining experience and leave the entertaining to the Main Show Lounge. At best this is only going to slow down the dining room service.

I certainly hope this is not the start of a Son of Signature of Excellence initiative.

I was thinking about to reserve a Mediterranean cruise with the Westerdam for August 2007 but, if this news is not a joke, I will return to Celebrity for third year or I will try Disney or Carnival...

The first day I thought that was a delayed fool's day new, but reading all the thread I am really disapointed.

NO folks, this is not a joke. Right now they are only having the MCD "thing" on the Volendam, where we had it last Christmas, but it is now being implemented fleet wide.

It was the dumbest thing I have ever seen HAL do on a ship. Thankfully we did not have it on the Noordam last week, probably because the ship is so new and the crew/dancers have to be trained.

Next time, we'll eat in the Lido. The whole thing was very tack IMO.

I would like to know if this new dinner experience is finnally implemented in the whole fleet. In case that it only will be implemented in a part of the fleet, it would be interesting to keep alive a list of the ships without the new dinner experience to avoid the rest of the fleet.

I start the list of ships which are at present free of the new dinner experience:
